How to Make a Meal With Pumpkin Spice Muffins
- Choose your muffin (if using a different variety), and determine the macronutrients (pumpkin spice muffins: 20g C, 17g F, 5g P)
- Determine what macronutrients you are missing – what ingredients can you add to them?
- How will you serve your meal? Will it be separate components (like a snack box), or a composed meal (like a parfait with a muffin crumble), or a grab-and-go meal (like a muffin sandwich)?
Pumpkin Spice Muffin Full Meal: 3 Ways
- Components: 1 Pumpkin Spice Muffin + 2 hard boiled eggs + 1/2 cup cottage cheese with cinnamon (P1 ratios)
- Parfait: 1 Pumpkin Spice Muffin crumbled over 1 cup 2% cottage cheese with 1/2 tbsp peanut butter (P1 ratios)
- “Sandwich”: 1 Pumpkin Spice Muffin sliced in half. Spread 1 tbsp cream cheese and 1/2 serving (about 1 tbsp) cranberry sauce (P2 variation) on each half. Serve with 4 slices turkey bacon on the side. (P1 ratios)

Chef Kenzie’s Pumpkin Spice Muffins Picnic Treat
Chop your freshly baked muffins into 1-inch cubes. Grab a few of your favorite summer berries and fruits (chop whole or large fruit like apples, pears, or watermelon into 1-inch cubes). Place one muffin “cube” on a wooden skewer. Then, add one berry or fruit piece. Continue alternating between fruit and muffin cubes until the skewer is filled up. Serve with a side of melted peanut butter for dipping – enjoy!
