Appetizers are a fun way to get the conversations rolling and start your dinner party on the right foot. Unfortunately, many homemade appetizers can take long preparation times, and store-bought appetizers often contain hidden sugars and/or additives. Kick-off Your Patio Party with a Few Quick Appetizers

Summer and appetizers go hand-in-hand. There’s nothing quite like sitting back on the patio, and sharing a few tasty appetizers with friends and family. The problem? Many appetizer options at the store re filled with added sugars, and homemade appetizer recipes can be quite labor-intensive. To make things a little easier (and tastier), we’ve provided a few of our favorite appetizer combinations below. Always Hungry?

  • Grain-Free Waffles or Pancakes, pg. 223 – Slice into 2-inch square pieces. Top with cream cheese, dill, and smoked salmon. (See Smoked Salmon Snacks Post)
  • Dr. Ludwig’s Favorite Frittata, pg. 225 – Divide batter into mini muffin tins and serve as small appetizer “two-bite-frittatas”. Bake at 350°F for about 15 minutes, or until cooked through).

Citrus & Herb Olives

These citrus and herb olives take just 20 minutes to make from start-to-finish (but only require about 5 minutes of active cooking time)!

Ingredients
  

  • 1 cup kalamata olives
  • 1 orange, cut into chunks
  • Zest of one orange
  • 1 tbsp olive oil
  • Fresh herbs like thyme, sage leaves, oregano, and sprigs of rosemary

Instructions
 

  • Pre-heat oven to 350°F.
  • Toss all the ingredients together.
  • Place in a baking pan and bake for 15 minutes, stirring a few times.
  • Serve warm.

Phase 1 Sample Meal

Mix 2 cups chickpeas with the olives and orange slices. Spread on the sheet pan as per the directions. Place four 4-ounce pieces of chicken breast over the chickpeas and olives. Cook as per the directions, increasing the cooking time to 20-25 minutes, or until chicken is fully cooked through. 
Serve each portion with 2 tbsp feta cheese (crumbled) and 1/2 an avocado (sliced).
